Step-by-Step Recipe Guide

This recipe will guide you through the steps to create soft and delicious sandwich bread using honey and milk. Follow these instructions for a perfect loaf every time.


Ingredients


Dough

  • 1 large egg, room temperature

  • 2¼ teaspoons (7g) instant yeast

  • 2¾ tablespoons (58g) honey

  • 3 tablespoons (43g) unsalted butter, melted and cooled

  • ⅔ cup + 1 teaspoon (165g) whole milk, warmed

  • ¼ cup (60g) warm water

  • 1½ teaspoons (9g) salt

  • 3½ cups (410g) bread flour

Egg Wash

  • 1 egg

  • 1 tablespoon water


1. Before You Begin

The milk should be warm but not hot. Aim for around 100-109°F. If the milk feels comfortably warm on your wrist, you're in the right range. Milk that's too hot can damage the yeast and affect the rise.

2. Making the Dough

  • In the bowl of a stand mixer with whisk or paddle attachment, combine the warm milk, melted butter, and instant yeast. Mix briefly to combine.

  • In a separate small bowl, whisk together the egg and warm water. Add the egg mixture to the mixer bowl along with the honey and salt. Stir until combined.

  • Switch to the dough hook attachment and gradually add the bread flour. Mix until a soft dough forms.

  • Cover the bowl and allow the dough to rest for 15 minutes. This short rest gives the flour time to fully hydrate and helps develop gluten more efficiently.

  • After resting, knead the dough on medium speed for 7-9 minutes, or until smooth and elastic.

3. The Windowpane Test

One of the easiest ways to know your dough is properly developed is the windowpane test.

  • Pinch off a small piece of dough and gently stretch it between your fingers. If you can stretch it into a thin, translucent sheet without it tearing immediately, the gluten is properly developed and the dough is ready for its first rise.

  • If it tears easily, continue kneading for 1-2 minutes and test again.

4. First Rise

Place the dough in a lightly greased bowl and cover. Allow it to rise in a warm spot until doubled in size, approximately 1-2 hours depending on the temperature of your kitchen. The dough should look noticeably puffy and airy.

5. Shaping the Loaf

Transfer the dough to a lightly floured surface and gently press it into a large rectangle. Fold one side toward the center, then fold the opposite side toward the center so the edges meet. Starting at the bottom edge, roll the dough tightly into a log.

Place the loaf seam-side down into a butter greased 9x5-inch loaf pan.

6. Second Rise

Cover the loaf pan and allow the dough to rise until noticeably puffy and nearly doubled in size, about 30-60 minutes. While the dough rises, preheat your oven to 350°F.

7. Bake

You can score the dough if desired or leave it smooth for a classic bakery-style loaf. Whisk together the egg and water for the egg wash. Brush the top of the loaf lightly.

Bake for 30-35 minutes, or until the loaf is deeply golden brown. The bread should sound hollow when tapped on the bottom, or register about 190°F internally.

8. Cool Before Slicing

As tempting as it may be, let the loaf cool. Allow the bread to rest in the pan for 5 minutes before transferring it to a wire rack. Wait until completely cooled before slicing. This allows the crumb to finish setting and gives you those beautiful soft slices.

9. Storage

Store the loaf in an airtight container or bread bag at room temperature for up to 3-5 days. You can also freeze the loaf for up to 3 months. Simply thaw at room temperature and enjoy.
